Sambal Goreng


Beans, tofu, and peté in coconut milk—one of Bp. Wakidi's favorites!

2 cloves garlic
4 small red chilis
2 long red chilis (cut in half, remove seeds, and slice diagonally into ½-inch pieces)
1 potato, cut into small cubes
½ cup cooked beans (kidney beans or soybeans are the best)
10 peté, halved
1 square of tofu, cut into small cubes
1¼ cups santen (coconut milk) from coconut and 1¼ cups water
1 tsp salt
½ tsp gula jawa (palm sugar)

  1. Stir-fry garlic, chilis, potatoes, beans, and peté in a little oil.
  2. Add tofu and stir.
  3. Add remaining ingredients and simmer about half an hour, stirring occasionally.
  4. Serve with rice.
